More than a dinner, THE SECRET 1969 is an invitation to embark on a culinary journey.
Aboard an authentic historic vessel built in 1969 for the British Royal Navy, we welcome you for an intimate evening where fine dining, history and the art of living come together.
Through seven culinary stops, each course tells a story inspired by the Caribbean and by the voyages that have shaped the life of this remarkable vessel.
INDEPENDENCE remains at anchor in Grand Case Bay throughout the experience. This is a floating restaurant experience, not a cruise.
Local ingredients meet flavors from distant shores, tradition blends with creativity, and each course has been conceived as a stop along an imaginary sea route.
As the evening lights reflect on the water and INDEPENDENCE gently moves at anchor, enjoy a timeless moment between sea and sky.
A deliberately limited experience
In order to preserve the privacy and quality of the experience, the number of places is intentionally limited.
We favour a warm and friendly atmosphere where each guest can take the time to savor, exchange and fully enjoy the exceptional setting offered by the bay of Grand-Case.
The Signature Journey: 7 Stopovers
Our signature menu takes you through seven carefully crafted creations:
Homemade foie gras crumble with mango-pineapple chutney
Wahoo tartare with aged rum
Cream of pumpkin soup with truffle
Half a lobster and crispy yellow banana
Lamb fricassee with prunes
Vegetarian Brie stuffed with jam
Sweet coconut from the islands
Each stopover can be accompanied by our selection of wines or our signature non-alcoholic pairing inspired by Caribbean flavors.
Boarding access
Access is via a gangway ladder. Then access to the toilet is via a traditional marine staircase, fully contributing to the charm and authenticity of the onboard experience.

THE SECRET 1969 is neither a traditional restaurant nor a simple guesthouse.
It is a unique, confidential gastronomic experience in SAINT-MARTIN, organized on board a former British military ship which has now become a place for sharing, escape and discovery.
As the number of places is limited, booking is strongly recommended.
